I had a great workout this morning and did an extra set of walking lunges as a little extra. They call that “lagniappe” in New Orleans, literally translated, “a little something extra.” Which is appropriate, since I indulged a bit during my recent trip. I rarely eat sandwiches and had to have a couple of Po-boys, along with beer and a couple of margaritas at Jazz Fest!
I also put my Vitamix to use this morning. I threw in a large apple (skin, seeds, stem and all), three large strawberries, 10 red grapes, one-half cup of filtered water, and a teaspoon of flax seed. It makes a great juice smoothie packed with antioxidants and fiber. My teenagers love it too. I make it most mornings and throw in whatever fruit I have around. I also add carrots usually (but don’t tell my kids about that ingredient)!
For lunch, I had a salad with an assortment of fresh greens, roasted red peppers, edamame, quinoa, feta, and sun dried tomatoes. Dinner will be a challenge as we will be going out after my daughter’s volleyball game.
